Basic Training Kitchen

Our basic training kitchen is well equipped with work stations. Modern equipment and utensils are used to give training for the first year students in the field of cooking by steaming, boiling, baking, grilling, braising, microwaving, etc.

Students are taught the basics of different types of cuttings like Julienne, Batonnet, Brunoise, Chopping, dicing, etc.

Bulk cooking is practiced in QTK by the second year students. Provides an efficient flow of work. It is attached to the students’ cafeteria. Lunch prepared for students is dished out from here. Mobile tandoor, Oven, Bain Marie, Butchery chopping blocks, etc., are some of the equipment used in this laboratory.

Advanced Training Kitchen (ATK)

Advanced Training Kitchen is a platform for the students with the basic culinary knowledge where they are trained in international cuisines. They include French cuisine, Spanish cuisine, Chinese cuisine, Italian cuisine and so on.

Bakery and Confectionery

A 09 kilo watt, 20 loaf capacity baking oven is used for the production of various bakery & confectionery items. There are ten work stations made out of stainless steel slabs. Basics of bakery and confectionery products are taught along with different methods of mixing various doughs and batters. Items prepared are varieties of cakes, pastries, puffs, cookies, Breads, etc.

Basic Training Restaurant

Students are taught the services of food and beverage for various outlets like specialty restaurants, coffee shops, room service, bar and banquets. Mock-up service practicals include laying and re-laying a table, service of the French Classical menu and service of Table d hote, and A la Carte menus. They also include different types of services like English service, American service, types of banquet settings, Gueridon, etc.

Front Office and Housekeeping 

At Aditya's Institute of Hotel Management, we provide our students with hands-on training in front office and housekeeping. Our students get the opportunity to work in reputed classified hotels in Pondicherry and gain valuable experience in the industry.
